Restaurants are defined as establishments that serve a full menu of food and beverage (non-alcoholic and alcoholic) to be consumed on or off the premises. The term covers a multiplicity of venues (i.e. fast food or quick service, fine dining, casual dining, drive-thru only and kiosks to name a few). Restaurants can be defined as with or without sale of alcohol, with or without table service and with or without seating. The annual receipts from the sale of beer, wine and liquor at 30% or less than 75% changes the exposure not the make-up of the definition of restaurant.

A restaurant’s property exposure is from cooking. The more grease laden vapor that is produced, the greater the exposure to potential fire. All grills and deep fat fryers must have fire extinguishing protection, hoods and filters. There should be fuel shut offs and adequate hand held fire extinguishers. Premises liability occurs from spilled foods and from interaction between serving staff and customers. The restaurant workers’ compensation exposure comes from slips and falls, cuts, burns, heavy and awkward lifting.
